Colorado Green Chile Stew!

This is a great dish for those cold, winter days when you need something that warms you throughout your whole body! It's a really easy recipe that I received from my favorite Julita!

Ingredients
2 tbsp. canola oil
1½ -3 lbs. lean pork or chicken breast with fat removed, ½” cubed (I prefer to have shredded pork that was slow cooked and forked)
6 red potatoes, peeled & ½” cubed
1 large yellow onion, peeled and diced finely
1 ½ c. chopped green chile
4 cloves garlic, peeled and minced
3 cups chicken broth
2 tsp. salt
1 28 oz. can diced tomatoes

Directions
1.   Heat oil in large pot over medium-high heat.
2.   Add meat and brown.
3.   Add potatoes and onion. Brown for about 4 minutes, stirring occasionally to prevent burning.
4.   Put meat, potatoes, onion, and rest of ingredients into a crockpot. Cook on low 6-8 hours. Alternatively, add rest of ingredients into pot and simmer, covered, for a minimum of 2 hours. Check during cooking to make sure water still covers top of ingredients, add chicken broth as needed.

I serve my green chile with a warmed up tortilla and shredded pepper jack cheese on it.

** Adjust the amount of broth added as needed depending on the size of the pot you’re cooking in. Add enough water to barely cover the top of all the ingredients.
