My friend Kjersten made me this pasta the first
time I went up to Boulder to watch A Game of Thrones on HBO a few weeks ago. It
turned out to be one of my favorite pasta dishes I have eaten! Since then, I
have replicated this a couple of times and now I am craving some more!
Pasta and Fried Zucchini (serves 4 generously, I
had lots of leftovers when I made it).
Ingredients:
2/3 cup sunflower oil
2/3 cup sunflower oil
3 med zucchini, cut into 1/4" slices
1.5 tbsp red wine vinegar
3/4 cup frozen, shelled edamame
2 cups basil leaves torn
1/4 cup parsley leaves
1/3 cup olive oil
16 oz pasta (I used farfalle)
Zest of 1 lemon
1.5 tbsp capers
7 oz mozzarella, tomato chunks
1) Bring a large of salted water to boil. Cook
pasta until al dente.
2) Heat sunflower oil in a saucepan over
medium-high heat. Fry zucchini in batches until golden brown on both sides.
Transfer to a colander to drain while you fry the rest of the zucchini. Combine
zucchini in a bowl and toss with red wine vinegar.
3) Blanch edamame in boiling water, 3 minutes and
drain.
4) Combine 1 cup basil, all the parsley, and olive
oil in a food processor. Add a little salt and pepper. Blitz to a smooth sauce.
5) Pour zucchini and its juices over the pasta. Add
the edamame, basil sauce, lemon zest, capers, mozzarella and tomatoes. Toss
together, season with salt and pepper. Top with remaining basil before serving.
